What's For Dinner




Yep, just another normal day!  Hubby & I were both up by 6am.  I knew there was a LOT I wanted to get done today: clean the bathroom, laundry, put out our fall decorations, change my seasonal tree to fall, and last buy not least get my work in the studio done.  Knowing I had all that to do, dinner was a snap.

Many of my readers already know that my hubby & I eat off of a meal plan.  It's simple, easy, and saves us TONS on the grocery bill!  So here's what we are having tonight:

Simple, Quick, & Easy Crock Pot Chicken

Prep Time: 5 minutes 
Cook Time: 8-12 Hours

Ingredients:

  • 1 Whole Chicken
  • Any Spices you Desire
  • 1 Large Onion
  • 5 Carrots
  • 1 Large orange
  • 1 Lemon

Directions:

SPRAY CROCK POT WITH COOKING SPRAY. Cut onion into sections, break apart into bottom of crock pot. Peel & Cut carrots and place on top of onions. Remove giblets from chicken, add 1 orange & 1 lemon (halved) inside chicken. Put chicken, breasts up, in your crock pot. Add pop up timer. Turn on for 8-12 hours and GO!

No need to add water, the chicken releases its juices itself!






Remove chicken & veggies for dinner. Serve hot for dinner alongside boiled potatoes and some stuffing. Or serve cold on top of a salad.

IMPORTANT: Do NOT clean out crock pot. Add 1 quart water, all bones, and any extra skin back into pot. Simmer ALL NIGHT (while you sleep). In the morning, remove the bones and remaining chicken pieces. The broth that remains is GREAT to cook with. Place in Ball freezable containers for instant chicken broth this winter!
